Baked Tomatoes and Feta
Serves 4
  • 2 tbsp olive oil
  • 400g mixed color cherry tomatoes
  • 3 garlic cloves, sliced.
  • 1 chilli, sliced.
  • ½ tsp freshly ground pepper
  • 1 zest of a lemon
  • 200g block of feta, sliced in half width ways.
  • Parsley chopped.
To Serve
  • Focaccia
1. Preheat the grill.
2. In a baking dish, combine olive oil, garlic, tomatoes, and Heinz Frito base.
3. Add feta, top with chilli, drizzle olive oil, and season with pepper.
4. Grill for 15-20 minutes until tomatoes char and feta turns golden.
5. Remove, sprinkle parsley, serve with focaccia.
