RECIPE
Serves 2
For the gazpacho
  • 1 shallot, finely diced
  • 2 garlic cloves, chopped
  • 1 Pepper, deseeded and finely diced
  • ½ cucumber, peeled and diced
  • ½ chili, de seeded and chopped
  • 1 x 500g Heinz Classic Passata
  • 1 tbsp sherry vinegar
  • 1/2 lemon, juiced.
To serve:
  • Crusty bread
  • Cucumber, finely diced
  • Olive oil
  • Smoked paprika (optional)
Method:
1. Soak shallot and garlic in boiling water for 2 mins. Drain and add to a blender.
2. Blend all ingredients until smooth. Refrigerate for 2-3 hours.
3. Season and ladle into bowls. Top with diced cucumber, olive oil, and a sprinkle of smoked paprika if desired. Serve with crusty bread!
