Greek Chicken Orzo Bake
Serves 6
  • 300g Orzo
  • 150g mixed olives chopped
  • 2 small red onions roughly chopped
  • 1 red bell pepper roughly chopped
  • 1 orange bell pepper roughly chopped
  • 4 cloves garlic finely chopped
  • 1 fresh lemon
  • 6 chicken thighs
  • 200ml Stock
1. Combine veg, orzo, 1 tbsp paprika, oregano, passata, juice from half the lemon, and stock in a baking dish.
2. Mix everything, seasoning with salt and pepper.
3. Place chicken thighs and lemon slices on top.
4. Sprinkle remaining 1 tbsp paprika, oregano, salt, and pepper.
5. Bake for about 30 mins until orzo is cooked, thighs are done, and everything is piping hot.
6. Garnish with lots of fresh herbs and feta cheese before serving.
7. Pair with a fresh side salad for the perfect summer meal!
