RECIPE
Serves 4
  • 4 tbsp olive oil
  • 1 small onion, chopped
  • 3 garlic cloves, 1 crushed and 2 thinly sliced
  • 3 sprigs fresh basil, roughly chopped
  • 3 medium tomatoes, chopped
  • 360g mezzi rigatoni
  • Salt and black pepper
  • Small fresh basil leaves to garnish
Method:
1. Fry onions in 2 tbsp olive oil until soft. Add crushed garlic, stir-fry for 30 seconds. Add tomato puree, cook for 1 minute, stirring.
2. Add tinned tomatoes, chopped basil, seasoning. Simmer for 15 minutes.
3. Cook pasta according to packet instructions, drain, toss with 1 tbsp olive oil.
4. Fry sliced garlic in remaining oil until golden. Add chopped tomatoes, cook for 30 seconds. Season.
5. Spoon tomato sauce into a bowl, top with pasta, fresh tomato, garlic. Garnish with basil leaves.
