RECIPE
Serves 8
  • 2 tbsp olive oil
  • 150g smoked bacon lardons
  • 8 pork sausages
  • 2 medium red onions, sliced
  • 2 leeks, washed and thinly sliced
  • 3 garlic cloves
  • 3 thyme sprigs, leaved removed and chopped
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 300ml vegetable stock
  • 1 x cannellini beans, drained and rinsed
  • 1 x butter beans, drained and rinsed
  • Parmesan rind
  • 200g spinach, washed
  • 3 tbsp breadcrumbs
  • 2 tbsp grated parmesan
Method:
1. In a heavy casserole dish over medium heat, add 1 tsp olive oil. Once hot, add lardons and cook until starting to crisp. Transfer the bacon to a plate. Next, fry the sausages until brown on all sides. Remove and slice into thirds, set aside with the bacon.
2. In the same dish, add onions, leeks, garlic, and thyme. Fry for 8-10 minutes. Add Heinz double concentrate puree, smoked paprika, cumin, and cook for 1 minute. Return the pancetta and sausages to the pan. Pour in Heinz chilli tomato base, vegetable stock, and parmesan rind. Season and bring to a boil, then reduce to a simmer. Cook for 15 minutes, then add drained beans. Cook for a further 15 minutes until thickened and sausages are cooked. Remove the parmesan rind.
3. Preheat the grill. Stir in the spinach, sprinkle with breadcrumbs and grated parmesan. Grill for 2-3 minutes until crisp and golden.
