Tomato Egg Fried Rice
Serves 4
  • 2 tbsp vegetable oil
  • 4 eggs, lightly beaten
  • 5 spring onions, white parts and green parts divided
  • 2 medium tomatoes
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 2 tbsp soy sauce
  • 1 tsp Chinese 5 spice
  • 2 x 250g microwavable basmati rice,
  • 2 x large carrots, grated.
  • 250g frozen peas
  • 2 tsp sesame oil
To serve:
  • Chilli oil
1. Crack the eggs into a bowl and beat with a fork.
2. Add 1tbsp of vegetable oil to a frying pan, once hot pour in your egg & stir until cooked. Break up the cooked eggs with a spoon and set aside off the heat.
3. Heat the microwave rice as per packet instructions, remove from pan and set aside.
4. In the same frying pan used for eggs, add another 1tbsp of oil. Once hot, add the spring onion whites, half of the greens, and the tomatoes, and fry for 1 minute.
5. Add Heinz tomato puree, ginger, and garlic paste to the pan, cook for 1 minute. Next, add rice, Chinese 5 Spice, and soy sauce, mix well, and cook for 2 minutes.
6. Include grated carrot and peas, stir to combine, and cook for 2 minutes.
7. Add the cooked eggs back to the pan with sesame oil, briefly mix, and season with more soy sauce if desired.
8. To serve, spoon the fried rice into a bowl, top with remaining spring onion, and drizzle with chilli oil.
