Tomato Soup
Serves 2
  • 3 tbsp olive oil
  • 1 medium white onion, sliced.
  • 5 garlic cloves thinly sliced.
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp chilli flakes
  • 1 tsp dried oregano roughly chopped.
  • 5 g fresh basil
  • 1 tsp caster sugar
  • 200ml vegetable stock
  • 4 tbsp cream or vegan cream.
To serve:
  • Basil leaves
  • Olive oil
  • Bread
1. In a heavy-based pan over medium heat, add olive oil and onion, garlic, salt, and pepper. Cook for 10-15 min until starting to caramelize.
2. Add Heinz Peeled tomatoes, chilli flakes, dried oregano, basil, sugar, and vegetable stock. Bring to boil, then simmer for 15 minutes.
3. In a blender or with a stick blender, blend to desired consistency. Return to the saucepan, add cream, and season as desired.
4. To serve, ladle into bowls, top with basil leaves, drizzle with olive oil, and serve with crusty bread.
