Tomatoes on Toast
Serves 2
  • 2 tbsp olive oil
  • 1 garlic clove thinly sliced.
  • ¼ tsp cayenne pepper
  • 1 tsp red wine vinegar
  • ½ tsp salt
  • 2 eggs
  • 2 pieces of soughdough
  • 2 tbsp butter
To serve:
  • 100g Feta
  • 2 tbsp parsley, finely chopped
1. Heat 1tbsp olive oil in a pan over medium heat. Add garlic and fry for 1 minute until golden.
2. Add Heinz peeled tomatoes, cayenne pepper, red wine vinegar, and salt. Cook for 7 minutes until bubbling and thickened, stirring occasionally.
3. In a medium frying pan, heat 1tbsp olive oil over medium heat. Once hot, crack the eggs into the pan and fry until the whites have set and yolk is runny. Remove from heat.
4. Meanwhile, toast sourdough and spread with butter. Slice in half.
5. To serve, divide the tomato mixture over the toast, place the fried egg on top, crumble over the feta, and sprinkle with chopped parsley. Finish with a grind of black pepper.
